INGREDIENTS Tomato sauce, Eggplant, Onion, Extra-virgin olive oil, Salt, Sugar, Basil, Pepper, Sunflower oil (traces). N PACKING Sterile glass jars, with metal screw lid PROCESSING PRODUCTS Aubergines, Onions, Basil: from local fruit and vegetable markets Tomato sauce: previous company processing Sugar, Pepper: from local traders Extra virgin olive oil, Sunflower oil, Salt: from producers premises CONSERVATION Pasteurization SEXPIRY 24 months from the date of production USE Typical Sicilian condiment to season first courses WORKING The aubergines and onions are washed manually or in the vegetable washing machine, then they are , first sliced and then cut into cubes and strips respectively. Subsequently, the aubergines and onions are fried and then dipped in the sauce of our production with the rest of the ingredients. After cooking, everything is still hot, placed inside the glass jars, in which two leaves of plated eggplant are manually added. Closing by hand. Pasteurization
